Alistar is a very underestimated champion, but in reality he has two of the best crowd control in the game. Though Alistar has great crowd control, he may not exceed tanking capabilities like Rammus, Shen, and Cho Gath. But all champions are different, Alistar is a greater support to the team than Rammus, Shen, and Cho Gath. Because he is a great support, he will not have many kills, or any kills at all. So if you're a kill lover, k:d perfectionist, kill stealer, then Alistar is not for you. However, your team will love you and his name will come true(Alistar is Greek for "man's defender").
This guide will give you an idea about how Alistar should be played and how to support and tank for the team. Due note that if you get proficient at playing Alistar, you may create your own builds if you feel that something else would be better.
*This is my first guide, please feel free to comment on errors and on what you feel should be changed.

Masteries + Runes
For masteries, you can do a basic 0/21/9 or if you want to be more of a support 0/9/21.
If you do not have teleport you can skip spatial accuracy.

Magic pen allows you to hurt other champions a little more.
Armor pen allows you to hurt minions and towers more, choose your pick between armor pen and magic pen.
Mana regeneration per level is pretty self explanatory.
You can choose either cdr glyphs or magic resistance glyphs. Cdr glyphs allow you to spam skills more, while magic resistance glyphs let you tank more magic damage(magic resist does not increase per level so it is good to get magic resist glyphs).
Quints of fortitude allow you to be a little tankier.
Quints of swiftness makes you faster since Alistar can be quite slow, choose your pick between fort and swiftness.
Flash Is a must have for Alistar. It lets him catch enemies out of surprise, or can sometimes save you or get you into position. It can also let you get that extra kill if enemies are just an inch away and rival your speed.
Ghost This may replace flash, but you cannot catch enemies out of surprise, and you cannot dodge crowd controls. However, it has less cooldown and allows you to move further over a longer period of time.
Teleport This skill allows you to move through the map. You can use this to push, defend, or get closer to a dying ally/enemy when you are across the map.
Exhaust This adds an addition crowd control to your already great crowd control skills. You can save allies or allow allies to close the distance between enemies.
Ignite This lets you prevent health regeneration, or even kill someone
Not to get:
Cleanse You do not need to get cleanse because your ultimate already cleanses out the debuffs.
But if you feel like you need the extra cleanse, get Quicksilver Sash
[spell=Colossal Strength] This passive is half of what makes Alistar a pusher. When you're pushing, remember to attack the turret... Pulverize Pulverize is one of the best aoe stuns in the game, it is be used to prevent enemy action.
This can be a great life saver by stunning carries, chasers, or to prevent someone from using a skill for a little.
Or you can use this to kill someone by preventing further movement, any escaping abilities, and potential lifesteal.
Headbutt Headbutt can be tricky to use for beginners, allies will rage when you save an enemy or kill a friendly champion. But if used correctly, can actually save an ally or kill and enemy.
Headbutt is used to send a vulnerable enemy into your teammates, isolating him. You could also headbutt them to the tower during laning phase.
Or you can use it to save an ally by increasing the distance between him and the enemy or temporarily stunning him.
*Some people don't know that headbutt stuns them for a little, please use this advantage by headbutting someone into the wall if you cannot get in a better position.
**If you headbutt someone into the wall, be careful if the wall is thin, if its thin, then the enemy will fly through it. But if your saving an ally then use this to your advantage.
An example of using headbutt is if fiddlesticks uses his ultimate then you can headbutt him away leaving your allies harmless.
Triumphant Roar Triumphant Roar is a small but surely heal. Use this to prevent your allies from being lit and even push with your minions. Since this heals you more than allies, it can even save you at times if your ultimate is down. Unbreakable Will Unbreakable will is like godmode if the enemy is not fed. You can use this skill to tank even further, push towers, even turret dive.
*this skill removes debuffs, so TRY to wait for the right time after you tank most of the debuffs.
Start out with Meki Pendant and Health Potion x2.
Shurelya's Reverie allows you and your allies to chase or get into position faster.
This also gives great cooldown reduction, health, and health and mana regeneration.
If you feel like you do not need the speed movement and health regeneration, you may get a [item=Soul Shroud], it has more health and mana regeneration, but the same cooldown reduction.
*but do not get both or it will greatly delay your build and in the end, have less utility than another items. Also note that you MAY have to start with Mana Manipulator and skip Chalice of harmony.
Boots of Mobility
Boots of Mobility allows you to move quickly so that you may save or chase someone.
"But what if they hit you?"
Well, if they are hitting you, then your job is done and you are tanking. But if they aren't attacking you, they are most likely running away or killing your teammates. This allows you to move faster and save or chase someone.
"Why not boots of swiftness?
You also do not need to move as fast if you are being tanked because lets face it, all you do is stun and headbutt, you're close ranged but you don't have great damage output.
Chalice of Harmony
Chalice of Harmony gives great magic resist and the mana regeneration that Alistar needs throughout the entire game. Late game, if all his slots are full, this item may be replaced.
After getting the core items, you'll be getting items based on the other team.
Versus Physical Damage:
Thormail is great against heavy physical damage dealers. It only costs 2000 gold for 100 armor and an amazing passive.
Randuin's Omen is give great armor, health, and health regeneration. It's active also slows movement AND attack speed in an aoe. It is great against faster attackers or great escapers. It is also great in team fights to help turn the tides.
Great armor, mana, and cooldown reduction. It's passive is also good against fast attackers.
Versus Magic Damage:
Banshee's veil gives health, mana, and magic resist. It's passive allows you to block one negative effect every 30 seconds. The passive is great for skill shots and crowd control or skills that do damage and can't be avoided by other means. An example is Ezreal's Mystic Shot or Miss Fortune's Double Up

Force of Nature give the best magic resistance in the game. It gives you good health regeneration along with is health% regeneration.
Spirit Visage may not give you the best magic resistance, but it will let you heal yourself a bit more, it will give you some health, and it will also give you cooldown reduction.
Warmog is a great item if gotten last, because after you get a lot of magic resist and armor, then what? You get more health! Your effective health will increase much more and it'll be harder to kill you.
Guardian Angel is for mixed teams, it gives both magic resist and armor. It also gives a neat passive that revives you.
Aegis of the Legion
This item has health, magic resistance, and armor. It also gives some magic resist and armor to your surrounding teammates. Though this item is only useful VERY early in the game.

Working in the team
The basics of Alistar is to initiate by using pulverize on an enemy to stun him. Depending on the situation you may use headbutt to distance a threat enemy or go behind someone stunned and headbutt them towards your teammates. By using headbutt on an enemy with a large amount of threat, you lessen the amount of time he becomes a threat to the team. Also if you headbutt someone towards your teammates(preferably not a tank) then he will be isolated from his teammates, being unable to be saved.
During the laning phase, you may want to use the technique of stunning and headbutting them towards your side to get early kills, or even a first blood. You can even headbutt them into your tower without it attacking the minions to inflict great damage on the enemy.
Be careful to not headbutt enemies in the wrong way, such as making them closer to a teammate with little health, or headbutting enemies the opposite direction with little health.
When headbutting someone, they will be stunned for a little, use this to your advantage by headbutting them to a wall. But make sure the wall is thick enough so that they will not fly through. Although if there is a thin wall, and there is an enemy you want to rid of, headbutt him through it.
Alistar will not be targeted much because of his low damage output. HOWEVER, if you crowd control correctly, he becomes the main target for at least half the team. If they continue to not target you, try using headbutt to someone not being target, or stun someone who will cause harm to your team.
